A “shift follow” is quite common. It’s an opportunity
for the company you are interviewing with to see you
in action. It’s also a chance for you to see a realistic
view of the company. This is an opportunity for both
sides to "test drive the car before purchasing."
So, what can you expect?
In the front of the house (FOH), you will spend time
following the team. Pay attention to the interaction
with guests. Note the "pitch" used at the table, |

and how the company creates the ideal experience. Talk with the guests. Ask them why they enjoy
dining at that restaurant. Talk with the staff. Ask them why they like working at that restaurant.
Be confident. Touch tables. Be willing to clean a table or expedite food. Get involved. Be hands on.
In the back of the house (BOH), you will spend time observing the food quality, attention to detail,
station specific roles and responsibilities, layout of the kitchen, timing of food, adherence to recipes
and commitment to serving quality food.
Be confident. Be sure to ask questions. Don’t be afraid to roll up your sleeves. Get involved. Be hands on.
As you prepare for your shift follow, be sure to put in the time to organize your thoughts. Reflect upon
your past experience. Dress as directed. Bring non-skid shoes with you. Don’t forget a small notepad or
index cards and a pen to scribble notes. Once the shift follow is complete, you will have additional
information to review. |
